Like a Phoenix rising from the ashes, the former Tamara restaurant makes a triumphant return under a new name with a dynamic team, still led by Clément Vergeat. A passionate and innovative 28-year-old chef, who showcased his talent on the show in 2018, reaching the quarter-finals. With a methodical touch, this skillful cook, a disciple of Toshitaka Omiya from the starred restaurant Alliance, reshapes the establishment aiming to guide it towards culinary stardom. The decor remains unchanged – a good thing since the sleek and relaxed dining room was a favorite, with its exposed stone walls, old mirrored tiles, white marble and wood tables, padded burgundy chairs, and comfortable cream-colored banquettes. However, everything else has changed. Clément Vergeat has completely revamped the restaurant, reducing seating from 40 to 22, hiring a meticulously selected new team, and limiting the offerings to a singular elevencourse tasting menu. Highlights include a dish featuring artichoke, crab, Kalamata olives, and yellow wine emulsion, raw langoustine tail gently heated with seaweed and cuttlefish bacon, pigeon cooked to perfection, and an exquisite dessert tart named Preserved Spring, an intriguing ice-cold treat made from meadowsweet.
