Thibault Nizard, a talented chef at the mere age of 30, has opened the doors to his own restaurant, L’Aube, nestled between the Louvre and the Palais-Royal. The Chef offers an exceptional gastronomic experience, blending the grand classics of French cuisine with a touch of creativity. He worked in several renowned fine dining establishments, including the highly acclaimed three Michelin-starred chef Alain Solivérès at Taillevent. His culinary prowess, particularly his sauces, has earned him recognition as a “young talent” in the 2023 edition of the Gault & Millau guide. Most recently, he was at the helm of Drouant, a renowned establishment. The ambiance of the restaurant reflects Thibault Nizard’s culinary style: understated and refined. The modern dining room, adorned in shades of gray and blue, reveals an open kitchen. Notable examples include the impeccable artichoke poivrade, a delightful quenelle de volaille, and grilled Saint-Pierre with peas, wild mushrooms, and a fish stock with almond milk. The desserts, crafted by the chef himself, are assembled in front of the guests.
